Green Tea Crusted Prawn Salad



1 tsp salt
1 tsp pepper
2 lemon wedges, divided
2 Tbsp olive oil, divided
1 green tea sachet
5.5 ounces prawns
1 cup arugula
1 cup spinach
1 apple, cubed
1 cucumber, chopped
1 tomato, chopped
1 handful of fresh parsley, chopped
Balsamic vinegar, to taste
1 handful of almonds, chopped
On a chopping board, sprinkle some salt, pepper, the juice of 1 lemon wedge, and 1 tablespoon of olive oil.
Cut open the sachet of green tea, and sprinkle 3/4 of the green tea onto the chopping board. Roll prawns over seasoning. In a pan, lightly fry the seasoned prawns until cooked.
In a large salad mix bowl, put together the rocket, spinach leaves, apple, and cucumber.
In a separate bowl, mix together the tomato, parsley, the juice of the remaining lemon wedge, and the
remaining olive oil Add to salad. Drizzle with balsamic vinegar.
Plate the salad mix before topping with the chopped almonds and cooked prawns.
