Shrimp Stuffed Mushrooms

This is a stuffed mushroom that is served chilled rather than the usual broiled or baked type.

Large whole mushrooms 24 24

Lemon juice, fresh or bottled 1/4 cup 60 mL

Granulated sugar 2 tbsp. 30 mt

Cream cheese, softened 4 oz. 125 g

Sour cream 2 tbsp. 30 mL

Broken shrimp, drained and chopped (or use fresh cooked) 4 oz. 113 g

Green onions, finely chopped 4

Hot pepper sauce 1/4 tsp. 1 mL

Paprika, sprinkle

Remove stems from mushrooms and save for another recipe. Mix lemon juice with sugar in bowl with tight fitting cover. Add mushrooms. Cover and marinate 3 to 4 hours, shaking bowl often. Drain well.

Mix cream cheese and sour cream together well. 

Add shrimp, onions and pepper sauce. Stir together. Stuff mushroom caps. Garnish with additional tiny shrimp if desired.

Sprinkle with paprika. Serve chilled. Makes 24 cold appetizers.

Creamy Stuffed Mushrooms

Always popular. The fresher the mushrooms the better.

Large mushrooms 24

Cream cheese, softened 4 oz. 125 g

Grated Parmesan cheese 1/4 cup 60 mL

Finely chopped green onion 2 tbsp. 30 mL

Reserved mushroom stems,chopped

Salt 1/8 tsp. 0.5 mL

Dill weed 1/8 tsp. 0.5 mL

Garlic powder 1/16 tsp. 0.5 mL

Gently twist stems from mushrooms. Reserve stems.

Mash cream cheese and Parmesan cheese together using fork. Add onion, mushroom stems, salt, dill weed and

garlic powder. Stuff mushroom caps. Arrange on ungreased baking sheet. Broil on second rack down from broiler until golden brown.

Salmon Canapes

Serve these a la carte—let everyone make their own.

Canned salmon (red, such as Sockeye, is best for color) 2x 7.5 oz. 2x 213 g

Cream cheese, softened 8 oz. 250 g

Canned ham flakes 6 1/2 oz. 184 g

Lemon juice, fresh or bottled 2 tsp. 10 mL

Horseradish 1 tsp. 5 mL

Liquid smoke 1 tsp. 5 mL

Onion powder 1/4 tsp. 1 mL

Paprika (use with pink salmon) 2 tsp. 10 mL

Crackers or small bread rounds

Drain salmon. Remove skin and round bones. Flake salmon

in bowl.

Add next 7 ingredients. Mash and work together. Spread on

crackers or bread rounds. Makes 3 cups (700 mL) spread.
