Crab Ball
Covered in nuts and parsley, this has a nice sharp flavor.
Serve with assorted crackers. Freezes well.
Cream cheese, softened 8 oz. 250 9
Hot pepper sauce 1/4 tsp. 1 mL
Salt 1/2 tsp. 2 mL
Pepper 1/4 tsp. 1 mL
Chopped green onion 2 tbsp. 30 mL
Crabmeat (or 113 g, drained, membrane removed) 1 can 4 oz., 1 cup 250 g
Finely chopped walnuts 1/4 cup 60 mL
Chopped fresh parsley (or 2 tsp., 10 mL, parsley flakes) 2 tbsp. 30 mL
Mash cheese with fork in bowl. Add pepper sauce, salt, pepper and onion. Mash well.
Add crabmeat. Mash to mix. Chill for 30 minutes or more before shaping into a ball. It will remain fairly soft.
Mix walnuts and parsley on large plate. Roll ball in mixture.
Cover and chill. Makes 1 ball about 3 1/2 inches (9 cm) in diameter.
