Tomato Salad Rustica - Italian Cooking serves 4



Time

Preparation takes about 20 minutes. Salad must stand for 30 minutes before serving.

Cook’s Tip 
Soaking the anchovies in milk removes some of the strong taste and saltiness of the fish.

Variations
Use red onions or green onions for a change. Add sliced black olives if desired.

1lb tomatoes
1 onion
4-6 anchovies
Milk
2 tbsps capers
1 tsp chopped fresh oregano or basil
6 tbsps olive oil

1 tbsp lemon juice

1. Soak the anchovies in a little milk before using, rinse, pat dry and chop. Cut the tomatoes into quarters and remove the cores. Slice each quarter in half again and place them in a serving bowl.


2. Slicetheonioninto roundsandthen separateinto rings. Scatter over the tomatoes. Cut the anchovies into small pieces and add to the tomatoes and onions along with the capers.

3. Mix the herbs, salt, pepper, oil and lemon juice together until well emulsified and pour over the salad. Mix all the ingredients gently and leave to stand for about 30 minutes before serving.

Step 1 Soak the anchovies in milk, rinse well and dry before using.



Step 1 Remove the cores from the quartered tomatoes and slice again if large.



Step 2 Hold the onion with a fork to steady it while slicing into rings.
