Brushetta with tomatoes - Italian cooking
Brushetta with tomatoes serves 6-8 italian cooking
Cooked over a wood fire in the traditional way, or more conveniently in the oven, tomatoes, basil and crisp bread make an unusual and informal appetizer.
18 slices of crusty Italian bread, cut 1 inch thick
2 cloves garlic, crushed
1/2 cup olive oil
Salt and pepper
18 large fresh basil leaves
4-5 ripe tomatoes, depending on size
Step 1 Toast the bread in the oven until golden brown on both sides and spread each side with some of the garlic.
Step 3 Warm the oil in a small saucepan and pour over the bread.
Step 4 Slice the tomatoes with a serrated knife and arrange on top of
the bread with the basil leaves.
1. Place the bread slices on a baking sheet and toast for about 10 minutes on each side at 375°F.
2. Spread some of the garlic on both sides of each slice.
3. Heat the oil gently in a small saucepan. Arrange the bread on a serving plate and immediately pour over the warm oil. Sprinkle with salt and pepper.
4. Slicethetomatoesin 1/2 inch rounds. Place one basil leaf and one slice of tomato on each slice of bread and serve immediately.
Time
Preparation takes about 15 minutes, cooking time about 25 minutes
Variations
French bread may be used if Italian bread is not available, but the taste will be different. White or brown bread maybe used.
