Turkey Kebabs
3lbs turkey meat
2 tsps chopped sage
1 sprig rosemary
Juice of 1 lemon
2 tbsps olive oil
Salt and pepper
4oz bacon, rinds and bones removed
Whole sage leaves
1. Remove any bones from the turkey and cut the meat into even-sized pieces. Combine the chopped sage, rosemary, lemon juice, oil, salt and pepper in a large bowl and add the turkey meat. Stir once or twice to coat evenly, cover and leave in the refrigerator overnight.
2. Cut the bacon in half and wrap around some of the pieces of turkey. Leave other pieces of turkey unwrapped.
3. Thread the bacon, wrapped turkey, plain turkey and whole sage leaves onto skewers, alternating the ingredients.
4.Cook in a preheated 400°F oven for about 40 minutes. Alternatively, cook for 30 minutes and place the kebabs under a preheated broiler for 10 minutes to crisp the bacon. Baste frequently with the marinade while cooking. Pour any remaining marinade and pan juices over the kebabs to serve.
