PIZZA RLISTICA - Italian Cooking

Pizza dough takes 40 minutes to make. including rising time. Bake pizza for 35 minutes.

Pizzas can be prepared and frozen in their unbaked form. When cooking from frozen. allow an extra 10 minutes. Pizza dough bases may also be frozen unfilled. Allow to defrost before topping.

If Fontina cheese is not available, substitute Gruyere or Emmental. Vary the filling ingredients using different vegetables and meats as desired.

Pizza Dough

(see recipe for Pizza with Peppers, Olives and Anchovies)


Grated Parmesan cheese
4oz prosciutto or Parma ham, sliced
2 tomatoes, peeled, seeded and roughly chopped
2oz Mozzarella cheese, diced
1 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
2 eggs, lightly beaten
5 tbsps heavy cream
2oz Fontina cheese, finely grated
Pinch nutmeg

Salt and pepper

1. Prepare the dough as forthe Pizza with Peppers, Olives and Anchovies. When the dough has doubled in bulk, knock it back and knead lightly. Flatten the dough into a circle or rectangle and roll out. Roll to a circle about 10 inches in diameter or a rectangle‘about 11x7 inches.

2. Lightly oilthe baking dish, place in the dough and press out with floured fingertips to form a raised edge on the sides of the dish.

3. Sprinkle the base of the dough with some of the Parmesan cheese and place on a layer of ham. Cover the ham with the chopped tomato. Mix the remaining ingredients together and pour over the tomato and ham.

4. Bake on the lowest shelf of the oven for about 35 minutes at 375°F. The top of the pizza should be nicely browned and the edge of the dough should be golden when the pizza is ready. Serve hot.

Step 2 Roll out the dough, place In a dish and press up the sides to form an edge

Step 3 Fill with Parmesan. ham and tomatoes.

Step 3 Mix cream, cheese and eggs together and pour onto the pizza.
